An Easter Celebration

Today was so wonderful. We arrived at my uncle and aunt’s home at noon and were greeted by the most delicious feast. Everything from quiche to stuffed shells to coconut cupcake. I “mmm”ed and “aaaahhhh”ed my way through a gorgeous plate filled with fresh vegetable and fruit salads, honey baked ham, chicken marsala, and Italian Breakfast Casserole. I loved every morsel of it.

Here’s the spread:

Italian Breakfast Casserole: Sausage, egg, french bread, roasted red pepper, and cheese

Broccoli and Cheese Quiche

Chicken Marsala- Emeril Lagasse’s recipe, which is the best I’ve ever had

Roasted Potatoes

Stuffed Shells

The best salad- Spring Mix with tomatoes, onions, cucumbers, eggs, sharp cheddar cheese, and apple

Honey Baked Ham

Fruit Salad

French Toast Casserole

And then there were the desserts:

Ricotta Pie

Strawberry Pudding Cake

Glazed Carrot Cake

Devil’s Food Cupcakes and Vanilla Cupcakes, both made by yours truly

Since the weather was warm and sunny, we spent most of the day outside, walking around the neighborhood, playing bocce, and chatting on the deck. I can’t think of a better Easter celebration.

We returned home at around 7 and I made this quick and super tasty dinner: Summer salad with roasted asparagus and maple glazed bacon. As Uncle Jessie would say, “Have mercyyy.” Yum.

After a fantastic day with my family, I’m feeling like this:

Pooped. I’m off to relax with Dee while watching “Life” on Discovery Channel. I hope the weekend was all that you wanted it to be. Goodnight, friends!
